Upside Down Square pie
I had some dough that i made from scratch which was sitting in my refrigerator. Rather than go for the traditional round pizza, i was craving something heavier. The square pie seems to have more cheese flavor when the cheese starts to brown in the oven. I assembled this pie in the order of fresh mozzarella followed by tomato sauce, and lastly a copious amount of Reggiano-Parmigianno cheese. I made sure to cover every inch of this pie with cheese and sauce. I'm sometimes used to getting a slice that doesn't have equal proportions of cheese and sauce. This pie was great, if you put care into every step, it will pay dividends in way of taste, flavor, and texture.
